Orange Foam Lightens up this Bourbon Cocktail at Charleston's Doar Bros.

When it comes to fall beverage flavor combinations, we’re always game for oranges and bourbon, whether the citrus is served by the slice, zest, juice, or foam, as seen atop the Bourbon & Clyde cocktail at Charleston's Doar Bros. Chef/Owner Jonathan Doar tops the drink with a fluffy foam he whips up in an iSi canister with egg whites, gelatin, housemade vanilla and cinnamon syrup, and fresh orange juice. “This cocktail is heavy on the booze, so it needed something elegant and relaxing to create sufficient balance,” says Doar of the bourbon, vanilla-cinnamon syrup, fernet, and green chartreuse drink. A final sprinkling of toasted pistachios adds another layer of nuttiness, color, and texture to the light-as-air top.
