Jose Alarcon Shares How He’s Making the Shift From Fine Dining to Fast-Casual

When the pandemic forced Minneapolis chef Jose Alarcon to close his live-fire, fine dining Mexican restaurant, Popol Vuh, he and business partner Jami Olson decided to open a fast-casual restaurant and food market called Vivir in the Popol Vuh space, next to his taqueria, Centro.
