Ten years ago, I worked in a restaurant that was shut down during a busy dinner service due to a failed routine health inspection. We asked guests to leave in the middle of their meals and comped thousands of dollars in unsettled checks. Once the premises were vacated, the inspector affixed a bright orange sign to the door informing the public that the restaurant was unsanitary, a stigma from which it never recovered.
