Crack Into Jidori Eggs

Why put any egg on a dish to make it better, when a Jidori egg will make it beautiful? The Japanese-bred free-range chickens are known as Hinai-Jidori (a cross of Hinai-dori and Rhode Island Red chickens). In Japan, they must have at least 50 percent Jidori ancestry to be authentic, but the telltale sign are the dark orange yolks—the result of a vegetarian diet.
