Börek, boureka, bureka—whatever you call them (and however you spell them), böreks are the flakiest delights of the Levant. Hundreds of variations exist across the region, and no two cooks make their pastries exactly alike. Most involve a thin, phyllo-like dough, and a rich filling baked into a puffy, beautifully burnished pastry that’s somewhere between meal and snack.
