Jean-Georges Vongerichten on Mashed Potatoes and Other Secret Obsessions

Jean-Georges Vongerichten put his stamp on a Chicago classic when he re-opened Pump Room at Public Chicago. And sure enough, there are some classics on his new menu (think chicken liver toast)—as well as some modern classics in the making.

Pump Room
Have fond memories of the Pump Room, going there in the 60's for their great Steak Dianne. One night we were surprised by Judy Garland with her entourage coming in and having dinner in Booth #1, we were in #3, offered her cocktails but she politely declined but thanked me and said that she just couldn't except drinks from all of her fans. We will never forget that encounter with a mega star!

JG... we came to know him from the PBS series about Korea that he did with his wife - he proved to be a man very comfortable in his own skin. Imagine a 4 star chef playing the straight man to his wife. PS-I absolutely love mashers!!!
