Kari is a third-generation butcher educator and author of The Art of Beef Cutting: A Meat Professional’s Guide to Butchering and Merchandising, which earned a 2012 James Beard Award nomination. Her product development work has introduced new cuts to menus and retail meat cases, including the flat iron steak, petite tender and Denver cut.
Kari was recently a judge on the popular TV show, Chopped, and is a member of Les Dames D’ Escoffier and Meat Business Women, a global professional networking group for women working in the meat business.
Most recently, she founded Range Meat Academy, an online vocational school that trains and educates future meat clerks, meat cutters and butchers.
